Just thought it would be nice to share some recipes we use either for a great dinner or awesome shore lunch with our catches. Here is on I have been using forever, it's easy, and adds a slightly "sophisticated" touch to many fish dishes. Works great on walleye, perch, trout, and quite a few others!
Lemon Butter Pecan sauce:
You need:
1 tsp. flour
3/4 lb unsalted butter and white pepper, to taste
1/4 cup beef stock or broth
2 tbsp. lemon juice
1 1/2 tbsp Worcestershire sauce
1 cup chopped or whole pecans (I prefer a mix of both)
You wanna dissolve the flour in cold water first. Then in a small saucepan, combine the beef stock/broth and the dissolved flour. Stirring constantly, cook over medium heat until slightly thick, roughly 5-6 minutes. Add the butter and let it melt. It's gonna look and smell kinda funny at first, like the butter will be too much. Don't worry, it all comes together at the end. Whisk in the lemon juice, salt and pepper.
In a separate skillet, use a little cooking spray and then add the pecans. Cook until lightly browned, then add the lemon butter sauce and reheat until just warm.
There ya go. It's pretty easy, and tastes great on trout. Also kicks ass on walleye too. If the lemon butter sauce is too buttery tasting to you still, just add a bit more lemon juice to your liking.
